Swedish buffet - 41 recipes

Perfect appetizer recipes for any Swedish buffet, with pictures, ideas and tips for arrangements and menu.

About the Swedish buffet

When it is not possible to prepare a meal due to lack of space, the cold buffet is very suitable.

A buffet is arranged as follows: snack trays and plates are placed on the tables in advance just before guests arrive. Place plates, cutlery and paper towels in a holder. Each guest takes a plate and serves himself. In this way the host saves on cutlery and plates, which at a table must be changed after each dish.

If there are several guests and the space is too small, even for arranging a cold buffet, then they prepare on individual plates the individual portions. On each plate it is tastefully arranged from each prepared snack, decorated as nicely as possible. Make sure there is enough food on each plate.
The plates are arranged before the guests arrive and are kept in the kitchen. This way the guests will not crowd around the table that the Swedish buffet would have arranged. Particular attention will be paid to decorating snack trays.

An original way to arrange the sandwiches and sandwiches is as follows: on a large, round plate, place a flat plate, face down, and on the bottom of it, place an empty plate face up and on it a small glass cup for compote. On this kind of pyramid, the sandwiches are arranged very nicely rows, rows, and the gaps are filled with greenery. On the saucer (around the glass cup) put olives, and in the glass cup at the top of the pyramid put notched moon radishes and greenery outside.

Drinks are served at a Romanian-style Swedish buffet, and brandy is served with snacks and liqueurs (homemade or commercial) for sweets.

Beef tongue with olives and sweet potato puree

I made this wonderful and very tasty food as my grandfather did. I am lucky that I received from him his notebook with many recipes that you never fail with. I remember going to the market and buying beef first, then going to each stall to look for vegetables. I also remember the aroma in the kitchen and the moment when my mother came from work and told my grandfather that it smelled of food from the block door "and you made your neighbors crave something good to eat!"))

Today not many people cook with beef, pork or sheep. And because of this, these wonderful recipes are lost. These organs do not cost much and implicitly we can cook on a small budget for more people.

The recipe is not very complex, you don't need a lot of ingredients, and the result is just right.
Keep the beef for about 4 hours in salted water in the refrigerator to get all the blood out of the meat. Then bring to a boil and bring to a boil. Meanwhile, put another pot of water on the fire. When the water where the tongue has boiled is thrown away, wash the tongue a little and then boil it in the other water on the fire.

Let it boil for about 70 minutes until the fork enters the meat lightly. When it is ready and still hot, clean it of that whitish skin, then cut it into slices of the right size. Cut the two onions into small pieces and put them in a pan with a little oil and the two cloves of garlic.
Mix a little, add a little salt and add the wine. Also now add the slices of tongue. Allow to decrease to evaporate all the alcohol, then add the diced tomatoes. Let the sauce thicken a little, add the olives, salt and pepper to taste.

At the end, after stopping the fire, add a few parsley leaves. For the sweet mashed potatoes, boil them in water with a little salt for about 15 minutes. Clean while hot and pass with a fork.

To have a higher creaminess, puree through a sieve, then season with salt and add sour cream.

Serve while the food is hot, but also the sweet potato puree.

Preparing pies with spinach and white tuna

Remove the dough from the cold, sprinkle the work surface with plenty of flour and spread the dough in a thin sheet of 2-3 mm.
I chose to prepare them in two ways - in the form of a roll and traditional in the form of a semicircle
For the traditional ones, cut 10-12 cm circles with the help of a saucer, place the filling in the middle, grease the edge with beaten egg, overlap and press the edges with a fork.
Grease with egg, sprinkle on top with a mixture of seeds and bake in a preheated oven at level 2 for 20 minutes or until nicely browned.

For rolls we proceed as follows:
Spread a rectangular sheet (15 cm wide) place the filling evenly on top, roll as tight as possible, portion into small rolls of 5-6 cm with a knife, place the rolls in the tray lined with baking paper, grease with egg, sprinkle seeds and bake at oven 15-29 min

Mushroom pies

A delicious appetizer, only good for picnics (as May 1 & hellip is approaching), parties or simply for breakfast.

They have the advantage that they can be made in time, frozen and baked when we need them. They can be stored in the freezer for 1-2 months,

initially frozen on a flat surface, then placed in zip-lock bags or pans with lids.

We ate them with a home-made tomato sauce, but they go just as well with or without ketchup.

a puff pastry dough of 800 g

500 g mushrooms (brown I used)

1 can of Sun Food tomatoes

For the sauce I used peeled tomatoes from Sun Food & ndash 100% healthy preserves, without additives or preservatives.

& ndash quantities for about 45 pieces & ndash

Let the puff pastry thaw at room temperature (or overnight in the refrigerator).

Saute finely chopped onion in oil, with salt for about 5-7 minutes. Then add the finely chopped mushrooms

and leave on the fire, stirring from time to time, until all the water evaporates.

Turn off the heat and add pepper (I like to put a lot) and finely chopped parsley.

We take one of the two sheets of puff pastry (800 g packs have two sheets), and we keep the other in the fridge.

Lightly spread the puff pastry on a floured surface and cut out circles / squares

in the middle of which we put 1 teaspoon of filling. Fold and seal the edges with a fork.

I used a shape that I struggled with a bit, but you can also do the fork version, if you don't have a shape like this.

I greased the edges with beaten egg, so as not to break when baked.

When they are ready, fill the pies from the first sheet and put them in the freezer, on a flat plate, for at least an hour.

(if we want to bake them on the same day) or for several hours if we bake them on another day & hellip

Initially I didn't freeze them and they kind of exploded in the oven, so if you want them to stay, you can freeze the beauties like me.

I gently kneaded the remaining edges of the dough after cutting and spread another sheet, do not throw them away! & # 128578

Put them in the pan, grease them with egg and sprinkle sesame or poppy seeds on top and bake them, frozen, in the preheated oven at 200 C for 15-17 minutes.

Fry 4 cloves of garlic cut into slices in oil for 10-15 seconds in oil (be careful, no more, not to burn!),

add the diced tomatoes, salt, sugar and oregano and let it simmer for about 15-20 minutes,

until it acquires a thicker consistency and the excess liquid evaporates, stirring from time to time.

In the last 5 minutes we put the 5th clove of crushed garlic (for a more intense flavor).

Let it cool and pass it through the hand blender until we get a fine sauce.

Tips for a successful picnic

Any outing longer than a few hours in nature, on the green grass, requires a little organization: prepare yourself with a blanket that fits all family members, sunglasses and hats, sunscreen, mosquito spray. In addition, any successful picnic involves taking home plastic or disposable plates, cutlery, dry and wet wipes, garbage bags (in which to collect all the leftovers, in the end, so that the perfect picnic place remains perfect and for other people).

Do not take an audio system with you (do not disturb those around you) and no dog barking or biting (same). Put all food in a refrigerator, with ice reserves, and in a basket - blanket, liquids, cutlery and all accessories. Alternatively, you can freeze the water in the freezer, in smaller bottles, which you can put among the food pans, to take the place of ice reserves.

When it comes to the most important part - the goodies in the basket - you need to make sure you arm yourself with cold water (in a thermos), other cold drinks (see lemonade recipe below) and safe foods to eat and transport. . Prepare cold salads in saucepans with lids, sandwiches wrapped in aluminum foil, homemade sticks, crackers and vegetable sticks (carrots, peppers, celery stalks) for spreads and sauces, jars in which you put individual portions of dessert - in other words , easy to eat by hand. In addition, you can take dried fruits and various nuts with you, in order to have healthy snacks at hand.
