We prick the eggplants in several places and we talk them on the stove at the stove. We turn them on all sides. After they are ready we clean them, cut their tails and let them drain on a chopper. I squeezed well, I cleaned the seeds. I beat them well until they became like a paste.
I put them in a bowl with a pinch of salt and squeezed a little lemon. Add the yolks and oil. Mix well, the amount of oil depends on your preferences. Add finely chopped onion and season with salt.
It can be served with baked peppers or tomato salad
