But instead of boiling eggs and then painting them, we figured we'd hatch our own egg. A chocolate egg, in fact, with a cute little white chocolate Easter bunny peeking through. But here's the real kicker: when you crack it open, you'll find a sweet and sensuous cream cheese filling and some delicious mango puree hidden inside. So what are you waiting for? Hop to it!

- 7 oz white chocolate, melted
- 24 oz dark chocolate, melted

- 28 oz cream cheese
- ¾ cup powdered sugar
- 1 tbsp vanilla extract
- juice of ½ lemon
- 1¼ cups heavy cream
- 4 tsp unflavored gelatin powder (optional)

- 2 mangoes
- juice of ½ lemon

1. Cut a rabbit out of a piece of paper and place it in one half of the Easter egg mold. Then place the other half of the egg mold on top.

2. Melt the white chocolate, pour it into a small squeeze bottle, and use it to color in the rabbit. Then let the chocolate rabbit set at room temperature.

3. Now melt the dark chocolate and pour about half of it over the white rabbit in the egg mold.

4. Swirl the mold around in order to distribute the melted chocolate evenly all over the mold.

5. Place the egg half on a cooling rack with the opening facing down. If the edges aren't smooth, straighten them after about 5 minutes with a spoon.

6. Once the chocolate egg has set, remove it from the mold and place it carefully on top of a small bowl. If you want a white rabbit on both sides of the egg, repeat the process for the other half. Alternatively, you can just fill the other half with melted dark chocolate. This saves a lot of time because you can make both halves of the egg at the same time.

7. While you wait for the chocolate to set, prepare the fruit filling. Peel and cut the mangoes into small chunks, add the lemon juice, and use an immersion blender to make a smooth puree. Line two bowls that fit easily into the egg halves and are the same size with plastic wrap, pour the puree into the two bowls, and freeze for about an hour.

8. Mix all the ingredients for the cream in a bowl and spoon the mixture into both egg halves.

9. Remove the frozen mango purees from their bowls and carefully press each portion into the middle of each egg half.

10. Spread some melted chocolate on the edges of the egg halves.

11. Now carefully glue the egg halves together and wait until the chocolate has set.

12. This Easter egg looks really impressive even when you perch it on top of an egg cup! And once you crack open the chocolate shell, the egg reveals a creamy, fruity core that will leave you begging for more!

If you're lucky enough to find this egg in your basket, be prepared for one eggcellent chocolaty treat. The cream filling and the tangy, sweet mango puree balance out all of that chocolate and add another dimension to a regular old Easter egg. With a little melted chocolate and a few egg moulds, it's easy to make your own chocolate eggs for Easter. This video shows you how!

We show you how to make a plain chocolate egg - using any sort of chocolate you choose - which you can put together hollow, or fill with anything from mini chocolate eggs to truffles to jelly beans.

We also show you how to make a marbled chocolate egg, which you can do with two or three different types of chocolate.

Tempering chocolate is also made easy using the method we demonstrate in the video - no endless stirring or scraping, and no marble slabs required!

You don't have to temper your chocolate, by the way, but if you do your egg will have a glossy, shiny finish for days to come (if it lasts that long!). If you don't temper the chocolate, it will 'bloom' after a day or two, which means it'll take on a matte, greyish finish - but it'll taste just as good!

How to Make Chocolate Easter Eggs (Easy)

Thanks for tuning back into another live kitchen tutorial! With Easter coming up, I thought it would be a propos to do a tutorial on how to make chocolate Easter eggs. In this video, I give you some tips on how to do just that, and show you how it works. So go ahead and get creative! For my vegans out there, this is dairy-free, so you're good to go :)

Chocolate Easter egg molds, any size (I used silicone eggs and cups)
2-4 of your favorite chocolate bars (mine were 3.5oz each, 85% dark chocolate) chopped or chocolate baking chips
Any filling of your choice: puffed rice, Cadbury mini eggs (if you're not vegan), almond or peanut butter - whatever you can think of. What was your favorite when you were a kid?

Double boiler (a pot with a glass or metal boil)
Spatula

Check the video for the tutorial, but essentially what you want to do is use a double boiler to melt your chocolate. Do not melt all of the chocolate right away, though. You'll want to save about 10% of what you've chopped up so that you can temper the chocolate once it comes off the double boiler.

Technically, to properly temper chocolate, you need a proper candy thermometer. Every kind of chocolate has a different temperature at which it should be tempered to (for milk chocolate, dark chocolate and white chocolate). The reason to temper the chocolate is to ensure a nice crisp, bite when you bite into the chocolate, as well as to prevent any blooming (a white film that forms over the chocolate).

I wanted to show you an easy way to do this that doesn't involve using a thermometer, but if you want to do this by the book, check out a video on You Tube on how to do it!

Once the chocolate is properly melted, all you have to do is fill your molds! Check out the video to see how it's done.

Chocolate Easter Eggs

I show you how to make Chocolate Easter Eggs, the simple way.

Subscribe for more sweet, simple recipes plus a taste of European life.

Don't forget to bump the quality up to 1080p!

You will need:
Easter Egg Mould - rub with cotton wool before use for better shine
Cotton gloves - readily available in most supermarkets
Probe thermometer

Chocolate - For 1 standard sized egg (15cm) : 250g Chocolate chopped + 50g finely chopped (only add as much as needed to reach required temperature).
Ideally use couverture chocolate as the extra cocoa butter makes it more liquidy when melted and thus easier to coat the mould but most good quality eating chocolate will work. If using non-couverture, work quickly and perhaps give it a little shake to move it around inside the mould and tap it when holding it upside down to remove the excess if it has become very thick.

1. melt chocolate in bowl sitting over pan of steaming water (not quite simmering), ensuring bottom of bowl not touching water. Be careful to ensure no water droplets enter the chocolate. Stir as it melts and as soon as reaches 45 degrees C, remove from heat.
NB
1)temp must reach at least 45 C but it must not go beyond 50 degrees C so it may be better to remove it from the heat just before it reaches 45 degrees C as it will probably increase up to 45 C thanks to the residual heat from the bowl.
2) if the tip of your thermometer is resting against the base of the bowl, the temperature is going to be hotter and not reflect the temperature of your chocolate accurately - try to keep the tip in the chocolate itself and move it around a little to give you an accurate reading.
3) Wipe the tip of the thermometer before re-inserting it into the chocolate (if you remove it!) to give you an accurate reading.
4) Once you remove the chocolate from the heat, take care to move away from the steaming pan of water (unlike I did in the video!) to prevent water droplets affecting the chocolate.

2. Add a few pieces of chocolate at a time (about 5 grams) and stir well until completely melted before adding next few pieces (otherwise lumps will remain). Continue until temp drops to about 36 degrees C. From this point add a couple of pieces at a time, stirring until fully melted, until the temperature drops to 32-34 degrees C. If the temperature has dropped within this range and a couple of unmelted pieces remain, remove them, working swiftly.

3. Coat inside of mould with chocolate, invert (tap the mould a couple of times if chocolate has become very thick) to remove excess. Scrape off excess chocolate whilst still holding it face down.
Then place it, face-down onto baking paper.

4. After 3-4 mins (maybe a little longer for milk or white choc) scrape off excess chocolate and place back onto baking paper. Leave to set in a cool dry place (NOT the fridge!) for a few hours.

5. Lift off mould and put on some cotton gloves to prevent fingerprints.

6. Heat large saucepan for about 30 seconds. dry base then lightly press first shell onto it. Fill with chosen filling and then repeat with second shell.

7. Press the two shells together and hold for 30seconds/1 minute then carefully place down onto baking paper (if it doesn't stand upright you may need to prop it against something).

8. Once set (at least an hour), make base by pressing it gently onto heated pan. Twist to ensure its melting down evenly (only a few seconds otherwise you will create a hole and filling will fall out!). Return to baking paper, and leave to set completely before wrapping and enjoying.

First dip the bottoms of the eggs in the chocolate and allow time to set. Maybe 10 minutes in the fridge. Then place set eggs on the grate and pour melted chocolate over the top. Sprinkle with decorations if using while chocolate is still wet. Allow eggs to set up in the fridge for at least an hour.

The original recipe is from SugarRunSpun.com, Sam. I needed a smaller batch for my tiny household, so I came up with this small batch recipe. If you need a larger batch here is Sam's original version.

How to Make Chocolate Easter Eggs (Easy)

Thanks for tuning back into another live kitchen tutorial! With Easter coming up, I thought it would be a propos to do a tutorial on how to make chocolate Easter eggs. In this video, I give you some tips on how to do just that, and show you how it works. So go ahead and get creative! For my vegans out there, this is dairy-free, so you're good to go :)

Chocolate Easter egg molds, any size (I used silicone eggs and cups)
2-4 of your favorite chocolate bars (mine were 3.5oz each, 85% dark chocolate) chopped or chocolate baking chips
Any filling of your choice: puffed rice, Cadbury mini eggs (if you're not vegan), almond or peanut butter - whatever you can think of. What was your favorite when you were a kid?

Double boiler (a pot with a glass or metal boil)
Spatula

Check the video for the tutorial, but essentially what you want to do is use a double boiler to melt your chocolate. Do not melt all of the chocolate right away, though. You'll want to save about 10% of what you've chopped up so that you can temper the chocolate once it comes off the double boiler.

Technically, to properly temper chocolate, you need a proper candy thermometer. Every kind of chocolate has a different temperature at which it should be tempered to (for milk chocolate, dark chocolate and white chocolate). The reason to temper the chocolate is to ensure a nice crisp, bite when you bite into the chocolate, as well as to prevent any blooming (a white film that forms over the chocolate).

I wanted to show you an easy way to do this that doesn't involve using a thermometer, but if you want to do this by the book, check out a video on You Tube on how to do it!

Once the chocolate is properly melted, all you have to do is fill your molds! Check out the video to see how it's done.

Classic Fruit and Nut Candy Easter Eggs

This recipe is by request from a dear viewer. They contacted me and asked me if I had a recipe for fruit and nut eggs that they remembered from their youth. Their mother made them every Easter but they had not had them in a very long time. So I promised I would share a recipe and here it is!

Fruit and nut eggs may be familiar to some of you. I remember them from when I was a child. They involve a creamy filling that is similar to that of a vanilla cream filled chocolate. The difference is that this also has chopped candied cherries and walnuts and is flavored with vanilla and a bit of the cherry juice or extract. You can also choose to add almond extract if you like to enhance the cherry flavor.

These are easy to make overall, but they are time and labor intense so you will want to prep yourself to spend an entire afternoon making these. One recipe will make a lot!

I molded my filling using an egg mold that I purchased from Amazon You can always choose to roll these into bon bons if you like to make things easier. Since this is for Easter I wanted to do things up right.

I made sure to spray the mold before I put in the prepared filling dough and unmolded it and placed the egg on to a sheet lined with parchment. The fillings went into the fridge to set for about thirty minutes before dipping into a coating. I used a combination of Wilton candy melts and semi sweet baking chocolate. This gives a richer flavor than simply using the candy melt.

Once dipped place the eggs onto a rack or a sheet pan lined with parchment. Return to the refrigerator for 15 more minutes before decorating.

I decorated my eggs with bright molded chocolates in the shapes of bunnies, lambs and ducks just for fun. The mold I used can be found here: You can choose to leave them plain, or decorate with either buttercream or royal icing.

I hope that this fulfills a memory and I hope that if you give these a try that you love them! I enjoyed replicating a recipe from long ago as well and hope you enjoyed sharing this journey with me!
