1 medium eggplant
1 large zucchini
1 large onion
2 cloves garlic
1 little cauliflower
1 green bell pepper
1 yellow bell pepper
1 red bell pepper
100 ml of olive oil
¼ teaspoon of thyme
1/2 teaspoon brown sugar
2 tablespoons tomato paste
1 tablespoon vodka
4 tablespoons water.

Heat the olive oil in a pan over medium heat and heat the onion and garlic.
After it has hardened, we take them out of the oil, we put them separately on a plate and we continue to heat the eggplant and zucchini slices one by one, in the same oil. During this time, boil the cauliflower bunches in salted water (about 6 minutes, so that they are still strong).
Arrange in the bowl that we will put in the oven alternative slices of eggplant, zucchini, red pepper, yellow pepper, green pepper and cauliflower pieces.

Over these we pour a sauce obtained from mixing 2 tablespoons of the oil in which we hardened the vegetables, onion and garlic, ¼ teaspoon of thyme, 1/2 teaspoon brown sugar and 2 tablespoons of tomato paste diluted with 1 tablespoon of vodka and 4 tablespoons of water.
Bake at 180 ° C for 30 minutes.

When serving you can sprinkle grated Parmesan or goat cheese, or you can leave it simple. It can also be an excellent garnish next to couscous, or on a polenta bed.

Lesson or pot theory

Please take my word for it. Everything has its own typical. Even this pot, which we called Serbian, but which, under the name of lecso, the Hungarians consider their traditional food. Isn't that why you throw everything in a pot and a delicious lunch comes out? I researched rigorously! I flipped through cookbooks, read blogs and, of course, each claims the perfect lesson! But as I read and read, I found some secrets.
-You only start cooking lecso from fresh vegetables, taken to the market, so we are in the 12th hour. Only white peppers, with thick flesh and the incomparable taste we know. Choose only ripe tomatoes in the light and heat of the summer sun.
-Respect the proportion between the three basic components:
One part onion
Two red parts
Four parts pepper
- Onions and peppers are hardened, almost fried in fat and only after they have softened and become glassy, you can salt. Otherwise, the salt removes water from the vegetables and they have no taste.
Cook over low heat, stirring occasionally, until tomatoes have a pasty consistency.
If you make lecso with rice, as I did, limit yourself to a tablespoon of rice per person, add it when the vegetables are almost cooked, and pour, if necessary, a little water.

And now, get to work!
For 4 servings:

400 g peppers
200 g well ripened tomatoes
100 g yellow onion
A clove of garlic
50 ml oil
4 tablespoons rice
A teaspoon of paprika
A piece of juicy sausage, like debret
Salt, freshly ground pepper to taste

Peel the vegetables, cut the onion and pepper strips, peel, if you want, the tomatoes (I didn't peel them) and cut them into cubes. Peel a squash, grate it and squeeze the garlic. Choose a large pan, or a thick-bottomed saucepan, to keep warm. Lightly fry the onion in oil until it softens and becomes glassy, add the peppers, mix carefully and let them fry without burning them. Stay tuned, this is not a food next to which we can watch TV series. Only when the peppers have softened and become slightly yellowish, salted, peppered, add the paprika and then the diced tomatoes. Now your food can boil quietly for about 10 minutes. Cut the sausage into slices, add it to the lecso, let it boil for a few more minutes, add the rice, pour a little water, if necessary, and leave it on the fire until the rice is ready.
You can, of course, make a variant without rice, to beat, at the end, 2-3 eggs. Or fry a few slices of bacon instead of oil. How many houses, so many recipes!
All I can do is wish you good luck!

Lecso - traditional Hungarian potted jar. A recipe that has stood the test of time!

Today I want to share with you a sensational recipe for pepper and tomato pots, which I cook every summer and it is absolutely delicious consumed as such or preserved for the winter. The pot comes out super fragrant, with a light texture and a slightly sweet taste - exactly to the liking of children.

It is extremely easy to prepare, and the result is beyond good expectations. It is served simply or with other dishes (meat, pasta, rice, potatoes, etc.). I highly recommend it! Good appetite!

Method of preparation

1. Chop the tomatoes with a mincer and put them in a saucepan on the fire.

2. Add the sugar, oil, peppercorns, salt, bay leaves and vinegar to the tomatoes.

3. Boil the tomatoes for 30 minutes, then add the chopped peppers.

4. Stir and boil the composition for another 5-10 minutes.

5. Fill the jars with pots, put the lids on and close them tightly. Turn the jars upside down, cover them with a thick blanket and let them cool well.

Note: I used jars with an airtight lid. I sterilized the jars in the oven for 30 minutes at a maximum temperature of 160-180 degrees. Sterilize the lids by boiling for 2-3 minutes.

6. Keep the pot well at room temperature (it is not necessary to keep it in the refrigerator all winter).
